Do you know pomegranate molasses? If not: good that we talk about it! Because you will soon no longer know how you could ever get along without the stuff. At least since Ottolenghi and its fantastic oriental-vegetarian cookbooks, pomegranate molasses has also arrived in German lands. And the sweet-sour-fruity-bitter syrup is just a punch on and to a lot of things. Actually, you can always use it, if you need a touch sweet. For example in dressings, marinades and dips, as a topping for hummus, porrigdes, cereals or breakfast bowls. As i-Tüfelchen in vegetables or stews. Or as a truly dazzling glaze for grilled fish or meat. Because instead of "just sweet" brings the dark red syrup a lot more irresistible flavor.
The only stupid thing about the otherwise fantastic pomegranate molasses: It is rather difficult to get in Germany. Sometimes one is lucky in Arab food shops. But please do not confuse the molasses with normal pomegranate syrup - it is usually just incredibly sweet and it lacks, among other things, this great caramel-like note. I have always ordered my stock molasses on the internet. But that's over now - from today on, we'll do the trick for ourselves. And it's really amazingly simple!
Pomegranate molasses requires exactly three ingredients: pomegranate juice, sugar and a dash of lime juice. Uses juice with 100% fruit content and no further additives. In German supermarkets is often only a nectar with plenty of water and sugar offered - we do not want. The pure juice you get - how can it be otherwise - the Turkish greengrocer, in the organic market and (with a bit of luck) now and then at discount stores. Of course, you can also work with fresh pomegranates to win the juice. However, the effort is in no good relation to the yield: The whole is really expensive and you still cleaned for weeks, the splashes of color from the kitchen. Eeem.
So take 15 minutes and make your molasses out of three ingredients super easy. And if you ask yourself what you are cooking with first ... how does it sound? The recipe for homemade pomegranate molasses
1 liter of pomegranate juice, 100% fruit content without additives
150 g of sugar and juice 1 lime
Boil the pomegranate juice in a tall saucepan. Add the sugar and stir until it has dissolved. Put the heat down a bit, add the lime juice and boil it down for about 15-20 minutes until the liquid has cooled down to approx.Then pour the pomegranate molasses (possibly with a funnel) into a clean, hot-rinsed bottle and allow to cool completely before sealing.
When stored dark, cool and dry, the homemade pomegranate molasses will not leave you Problems several months.
